Pizzas cook in wood-fired ovens imported from Italy. The crust is 4-5 day fermented sourdough (flour, water, salt, and natural levain). We use Double Zero flour, unbromated unbleached flour, and San Marzano tomatoes grown on the side of Mt. Vesuvius. The kitchen is seed-oil-free. There is no microwave. Organic first when we can. The rule on the line is food we'd feed our family.
